Last week, it was the stomach bug. This week, the flu made it’s way into our household with the first diagnosis yesterday. Least to say, I’m hunkered down at the house most of the week tending to my sick tiny girl and doing my best to make sure her germs don’t spread to anyone else.
This morning, I ran out of my beloved French Vanilla Nutpods Coffee Creamer. Since I found out the baby is allergic to dairy last fall, I’ve purchased Nutpods non-stop. I go through about 3 cartons a week (about $12 worth), because Mama needs coffee to function given I’m waking up through the night with Grady (typically 2 to 4 times) and it seems like someone is always sick. #lifewith4kids
At any rate, I knew I could not get by without my coffee, so I decided to try my hand at a homemade version of Nutpods. I happened to have all the ingredients on hand and whipped up a copycat version of my favorite French Vanilla Nutpods flavor in less than 5 minutes. It was so easy and I was so impressed with the flavor that I plan to make this dairy free coffee creamer myself from now on. It may even be a tad creamier than the Nutpods version. Plus it doesn’t hurt that this batch costs less than half the price per ounce!
Copycat Nutpods Coffee Creamer
Ingredients:
- 2 cups unsweetened vanilla almond milk
- 1 can full fat coconut milk
- 1/8 tsp sea salt
- seeds from 1 vanilla bean or 1/2 tsp vanilla bean paste
Simple blend all ingredients with hand mixer or in a blender. Makes just shy of 4 cups. Store in airtight container in refrigerator.
